It’s velveeta/cheese but with jalapenos added in some form to make it mildly spicy. And it is usually a distinct wad of processed cheese goop from those two brands.
So basically the “nacho magic” is an insipid amount of spice and a lower price point. Which sounds delicious
sodium citrate.
Here in Tucson, we always add canned jalapeno slices to give it a less insipid amount of spice.

This stuff will always be my touchstone for what ‘Nacho’ cheese should taste like. It’s perfect in every way.
