Absolutely everybody does some kvetching during the down time, but it’s been a year of DEFINITELY online meetings, and they existed before that, so a little caution is expected. Plus, if you’re an elected board, I feel like you should have even more care.

Exactly this. If it is something you wouldn’t put in an email, knowing that said email could be forwarded to anybody, than you probably shouldn’t be saying it out loud or via chat in an online meeting that’s been advertised to the public.
