This taco is one of my favourite finds after moving to Austin. Doubly so after I realized the grilling technique so well on display here from Jason looks similar to good shwarma (or real greek Gyro) because they are all descended from a common culinary ancestor.
(I’m not sure how the spongy excuse for gyros became the American mainstay btw, but at least in Toronto you are far more likely to get gyro that looks similar to this - lamb and beef hunks on a vertical spit - than whatever America has decided a gyro should be).
Either way, these look delicious! The best versions of al pastor I’ve personally had were made by small taco shops (or trucks!) here in Austin, so I bet your backyard version is excellent
