A real conversation is what you just engaged in; right here, right now. It involved both parties exchanging info and opinions, not just ‘waiting for their turn.’
Your anecdote illustrated it as well, and therefore is very much on topic.
Pausing, listening and then internalizing/processing what the other person said are the areas where men who 'splain are severely lacking.
At first i was all “but that’s not me!” or “you don’t know me” and was going to reply with all the reasons to support this. Then I realized that’s probably 'splaining. And you’ve probably already heard such protestations.
But after thinking on it for a couple days, I realize I have to work on this. Maybe I need to stop when their eyes glaze over or they’ve tried to leave my office for the 3rd time.
OK, one defense… I’m pretty sure I do the same thing with men. 
Oh 100%. I work and live in all male-dominated spaces so, like Jane Goodall, I have studied the interactions. Men speak to each other this way constantly. I hear men complain about other men speaking this way also, they just don’t understand there’s a word for it. “I hate it when people assume I’m an idiot” or “Don’t tell me how to do my job” they will say.
I have tried a couple of times to tell them there’s a word for this, but it never goes well. It feels like a “woke feminist bullshit” word to them, so they refuse to acknowledge it. Then go back to complaining about how certain of them speak to each other. So close. 
This is the social interaction version of men’s bathrooms. Men complain their bathrooms are disgusting and womens’ are always nice, but they don’t understand who’s fault that is. 
But seriously, that one is tough for me. The struggle is real.
This is a great question that I need to start asking. I pretty much explain things for a living and have a bad habit of assuming the average person knows nothing about whatever niche topic I’ve been writing about lately. I get really excited about the opportunity to share knowledge and forget others may know about the topic as well.
I’m gonna start working that question in before infodumping on folks
