I had an ex-gf (emphasis on ex) who made grilled cheeses by spreading mayo instead of butter on the outside of the bread before grilling. I remember yelling “WTF ARE YOU DOING?!?”
They weren’t awful but they weren’t buttery either.

I’ve done that, and yes, it is very wrong.
The mayo (and mustard) belong on the inside, certainly. I will admit that, instead of butter on the outside, I use a good olive oil, salt & pepper. Press cook inside a George Foreman grill, so it’s more of a panini than a traditional grilled cheese.
edit: this has the delightful side-effect of pressing melted cheese out of the sandwich and onto the grill, where it becomes a delicious, crispy, fried-cheese snack!
