Mine is simple.
3 Tbsp soy
3 Tbsp sugar
1/3 cup sake
1/2 tsp Ground ginger
1/2 tsp garlic paste or ground garlic
Reduce in a pot for a grilling glaze
Scale up for a marinade.

BTW, tried some of this yesterday, it’s like a slightly more umami/robust worcestershire sauce, there isn’t so much of the tangy tamarind flavor, I quite like it.

We finally sampled the wares this weekend. It’s been in the garage deep freeze all these months. Judging panel of two is unanimous: this past winter’s experiment in making an alcoholic beverage from some of my Meyer lemon harvest was a success!
A little bit goes a long way, though! We tried it as a digestif. I was so afraid it would taste like lemon Pledge, but it’s tangy and sweet, syrupy, and quite smooth.

Many years ago some friends and I went out to dinner at a new, hip place for a special occasion. I ordered the chicken pot pie—I think it was trendy at the time. Unfortunately, I guess it was supposed to be lemony or something, but it tasted exactly like Janitor in a Drum. I couldn’t even force myself to eat it

Ehh, the Mississippi does start in Minnesota, and I believe river boats like the one shown on the label did make their way to Minneapolis, and Minnesota does produce maple syrup (though I don’t see anything about qty / market share). Can’t figure out the NJ connection though… Maybe that’s where the maple flavored part comes in…
