Mine is simple.

3 Tbsp soy
3 Tbsp sugar
1/3 cup sake
1/2 tsp Ground ginger
1/2 tsp garlic paste or ground garlic

Reduce in a pot for a grilling glaze

Scale up for a marinade.

Japan, South Korea and Taiwan have been doing it for a while as cafe food/bakeries.

BTW, tried some of this yesterday, itā€™s like a slightly more umami/robust worcestershire sauce, there isnā€™t so much of the tangy tamarind flavor, I quite like it.

We finally sampled the wares this weekend. Itā€™s been in the garage deep freeze all these months. Judging panel of two is unanimous: this past winterā€™s experiment in making an alcoholic beverage from some of my Meyer lemon harvest was a success!

A little bit goes a long way, though! We tried it as a digestif. I was so afraid it would taste like lemon Pledge, but itā€™s tangy and sweet, syrupy, and quite smooth.

Many years ago some friends and I went out to dinner at a new, hip place for a special occasion. I ordered the chicken pot pieā€”I think it was trendy at the time. Unfortunately, I guess it was supposed to be lemony or something, but it tasted exactly like Janitor in a Drum. I couldnā€™t even force myself to eat it :laughing:

Ehh, the Mississippi does start in Minnesota, and I believe river boats like the one shown on the label did make their way to Minneapolis, and Minnesota does produce maple syrup (though I donā€™t see anything about qty / market share). Canā€™t figure out the NJ connection thoughā€¦ Maybe thatā€™s where the maple flavored part comes inā€¦

Yeah, kenji is the base for several of my dough recipes, but worried this one seems more easy than authentic, if that makes senseā€¦? But may be a good place to start.
