Chef John’s recipe is legit (saying this as a Detroiter). You don’t have to use the specific 10x14 pan, though. A 9x13 baking pan works fine as long as it’s a cheap metal pan. No glass or ceramic or air bake pans. Thin sheet metal works best.
This is my go to, follow his instructions, and you get the proper starting materials, and you can make prety good pizzas, but you do need something that can hit the proper temp (preferrably with wood) for the perfect crust.
- Proper flour is important, we use caputo, or molisana, but make sure it’s 00 pizza flour.
- His gather and let lyolize (iirc) method does work well, needs a lot less kneading.
I have a countertop italian thing, gets close, but still takes 120-150 secs to cook it, unlike a proper pizza oven. Note no leopard spotting, and doesn’t balloon up quite as much.

Just have to give a shout out to the smocked dress, so much like what I dressed my girls in for special events. They were considered old-fashioned even back then, but a classic is a classic.
I love that era the first time my Daughter wanted to dress herself. Everything was miss matched down to her socks and shoes.
Peppers and onion sweated down, fresh thyme, fresh sausage, on filo pastry. Cooked for ten, added mozz and fresh goats cheese cooked another ten or so…
Forgot to take a picture before digging in. But this is/was crab cakes and prosciutto-wrapped scallops in a parmesan mornay sauce, with “London broil”.

We are having Boars Head smoked uncured kielbasa, corn on the cob, black eyed peas. ( menu so far)
in honor of David Chang, we are going to cook some - gasp! - cheeseburgers on the charcoal grill! along with skewers of brussels sprouts, bacon and pineapple.
Grilling burgers this evening ( in light of this)
Making “not peach cobbler” (because MIL would feel attacked) baked peach dessert
Corn on the cob
Vinegar-based coleslaw because the mayo-drenched stuff is vile
Baked beans from a local BBQ place (definitely not vegetarian)
