You don’t have Karen Demasco’s Craft of Baking? You’ll have to swap the buttermilk out for cream so you can heat it for steeping and then add lemon juice, know that trick?
Anyway, she’s the best pastry chef, check it out.

Fuck, yeah. At least I’ve turned a few chefs onto malted waffle mix! (Order enough and you get a free industrial waffle iron, and who doesn’t like free waffle irons?)
