Don’t forget that cheese is a leading cause of veal. In a dairy culture, you only need a few males in the herd; the rest are superfluous (and hungry). And, as Bog would have it, the best source for the enzyme that separates milk into curds and whey is found in a goop called rennet, produced in ruminant stomachs, harvested after the stomach is removed. The math: dairy farmers don’t need live male calves + people like cheese = adios live male calves.

The dead male calf bones, hides, brains, etc. all have markets, so you just have to gin up some snob appeal about the meat to keep it in demand… Maybe you arrange for some product placement in the local holy stories about young male calves being perfect god-pleasing sacrifices for all occasions, and blam! you’ve got everybody asking where they can get some juicy young male calf. Profit!
