so easy to make too…don’t have to bother baking anything.
Pro tip: lightly fry the corn tortilla in a little oil just to the point where it’s soft and flexible and not crispy at all. Then dip both sides of the tortilla in the sauce warmed up in a large skillet. I personally just like lots of chopped onions and cheese but you can basically use anything - black beans, ground beef, leftover chicken. That’s the beauty of Mexican food.

My grandfather, who talked about food a lot, mentioned having them stack-style during WW2 (I think while he was at Biggs in El Paso).

The corners near my place are sadly deficient in taco trucks.
We like Pecado Bueno, and La Carta de Oaxaca is good (and apparently pretty authentic).
