Yeah, but the regular patrons would not want to be seen to be, umm, different. It’s cool to pretend not to notice skill.

- They are probably not close together because of the heat off the tava - that can interfere with getting orders out and getting flour in to knead

If he throws it with enough spin, would that not stretch the dough out further?

I actually thought about it. but then, its just one roll of pin and one throw. And paratha by nature needs to be folded once with leavening inside and rolled out again. A roti is a flat piece, but it needs to be made of wholewheat flour that doesnt stretch well when thrown, and rotis need to be thin.
