I thought the traditional response to “How do you like them apples?” was to mumble sheepishly and shuffle off into the background.
Since I started going to farmer’s markets, say, a decade ago, I’ve been keeping a log of all the apple varieties I’ve eaten. Favorites were Golden Russet, Spencer, Earligold, Cameo, Zestar and Arkansas Black. Least favorites were New Zealand Queen and Royal Gala. Everything else falls in the middle.
However, I prefer really firm apples with tart notes- I ask the farmer which ones I can “use to hammer in a nail”.
My favorite supermarket apple though is the Granny Smith because it is reliable in being tart and tough and it holds up nicely in my lunch box.
Ah, the apples of my youth-
We had an orchard on our farm, and the best tasting were the Astrachans.
To my pallet, a perfect sweet/tart combination.
They are long gone now, along with the farm~
