The press releases seem to be really baffling. Every story I’ve seen about this specifically says that the separate holding company (previously RemainCo) is what’s being renamed Altaba, not Yahoo. And then they’ll start talking about the death of the Yahoo name and how sad it is that we’re losing an iconic internet brand.
As far as I can tell, Verizon can (and most likely will) keep using the Yahoo name for their consumer services.

That’s exactly correct. The press is making a huge deal out of nothing, and being completely misleading.
Correct me if I’m wrong but Yahoo.com and the like stay as yahoo (after being bought by Verizon) while the parts of Yahoo not bought by Verizon (which holds shares in Alibaba, etc) become Altbaba?
