Real Texas chili is chili con carne. Chunks of beef, not ground beef, with either a chili sauce with high heat and smoke or with salsa verde. Of course they would see Cincinnati chili as an abomination. It’s like how I as a Midwesterner view both New York and California pizza.

Real Texas chili also has no filler. No rice, no beans, no veggie chunks, just meat and sauce. I’ve had some great ones in the past but i’m not picky enough to say no to a really good chili if it had other fixins in it besides meat.

For as many times as I heard the cocoa thing being said about Skyline, I never could pick off a cocoa flavor note, and I’m a decent analytical taster. Glad to hear someone else confirm this!
