Seems like an interesting restaurant concept. There’s only one sandwich, made continuously, assembly-line style… dough goes in one end, gets extruded into a continuous baguette, passes through an oven, gets sliced in half and fixin’s inserted, then you just cut off a segment to serve it. Pay by the inch.
Yes, buche is made with a thin cake rolled up with icecream. The bread loaf recipe is something different. I’ve only seen it once, years ago, though I’ve seen the loaves in stores often.
